Caribbean Tenderloin With Mango Salsa
Flavorful, easy, and affordable, this crowd-pleasing supper checks all of the boxes. Plus, the dish comes in at just 248 calories per serving. Add a green salad or a side of rice, and you’re done. We devised the recipe for colder months, relying on the broiler to cook the pork tenderloin, but you could just as easily grill the meat for a summertime meal. Love the mango salsa? We sure do. So much, in fact, that we’ve also tried it over grilled chicken, fish fillets, and shrimp. And scooped onto tortilla chips. It’s a versatile, tasty, and healthy sauce to keep in your back pocket.
How to Make It
Step 1
Heat broiler. In a medium bowl, combine the mango, scallions, 1 tablespoon of the oil, lime juice, crushed red pepper, and ¼ teaspoon salt. Set aside.
Step 2
Rub the pork with the remaining 1 teaspoon oil. Season with the coriander and ½ teaspoon salt.
Step 3
Broil the pork, turning occasionally, until cooked through, 12 to 15 minutes. Let rest 5 minutes before slicing.
Step 4
Serve the pork with the salsa.
